Curried Chicken and Rice

1 onion, chopped
1-2T oil
1 cup long grain rice
1 apple, grated
1/2c currants
3/4T brown sugar
2t curry powder (or a little more)
2c broth (use more broth than 2 cups for more moist and juicy)
2t lemon juice
2.5c cooked chicken, diced
1/4c slivered almonds, toasted

Grease casserole, saute onion until soft. Add rice and saute 1/3 minutes, stirring. Add remaining ingredients except almonds and stir.

Cover & simmer casserole until rice is tender (mix once during 20-25 mins period)

Serve with chutney.
