Fitness Update

I forgot to mentioned my progress with my Personal Trainer in the last entry.

After the New Year, I really buckled down and am focused on a whole foods, vegan diet and am pushing myself with the cardio portion of my training.

As a result I've lost about 10lbs in January and my clothes are feeling comfortable again. I feel more energetic and have a more positive attitude. The purchase of some vegan cook books (including 2 slow cooker books) has made a difference for me. I'm not a great cook, but even I can cut and chuck vegetables into a pot and then leave it for a few hours. This really is ideal for the winter, because it's a warm meal and mostly comfort food. :)

On Friday I whipped up a batch of vegan chili, which followed a creamy vegetable curry I made last week. I'm on the hunt for a spicier curry recipe. :)

This week I'm hoping to make a batch of Jamaican-Style Coconut Rice Bowl. It sounds delicious.
