I am still grinning after this meal. Check it:
1 large yellow onion, chopped
2 tbsp green curry paste (be sure it doesn't contain shrimp, if you're vegan)
2 tbsp olive oil
1 very large sweet potato
1 tbsp brown sugar
zest of 3 limes
juice of 3 limes
8 oz vegetable broth
1 can lite coconut milk
chopped cilantro for garnishingAdd the oil to a pan.
