Tilapia with bell peppers and onions last night. Forgot to take a photo (D'OH!). Here's what I did:

First, I brushed two tilapia filets with olive oil and applied medium amounts (very scientific, I know) of Emeril's Fish Rub. I know that's cheating, sue me. Placed in foil with lemon wedges and capers. I then took the left over pieces of red, orange, and yellow peppers and placed them on skewers with pieces of vidalia onion. I combined some olive oil, balsamic vinegar, Italian seasoning, and red pepper flakes (only now as I type this am I realizing the irony of red pepper flakes on red peppers), shook the mixture up, and brushed it onto the kabobs of peppers and onions as the were grilled.

I'd highly recommend Emeril's Fish Rub. It's quick and quite tasty!
