I made a pot of Tortellini soup this weekend. It's one of the easiest things in the world to make, but it's super yummy! I think I've posted the recipe before, but it's worth repeating.
Ingredients:
1 pound hamburger
1 can green beans
1 can french onion soup
1 can beef broth
1 can
Ro-tel diced tomatoes1 can diced tomatoes
1 can cannellini beans (drained and rinsed)
1 pkg. cheese tortellini (or if you can't find them like me this weekend, cheese ravioletti works, too.)
1 tsp. dried basil
Parmesan cheese, grated
Brown hamburger and drain. Add green beans, french onion soup, broth, and both cans of tomatoes (all undrained). Add drained and rinsed beans, 3 cups of water and basil. Simmer for 20 minutes to a few hours. Add tortellini and cook for 20 more minutes. Serve with grated parmesan on top.
I also recommend eating this with some sourdough bread on the side. Es muy yummo.
