Lamb Kabobs

Had defrosted some of our half lamb share and needed a quick dinner. Was originally thinking Rogan Josh or something along those lines. But I got stuck late at work, so on my BART ride home I decided to look up something a bit quicker. I found this recipe for moroccan lamb kabobs by Dave Lieberman. I didn't want to fire up the grill so I just put the chunks of lamb on the broiler pan and broiled them for a couple of minutes. They turned out really tasty.

I threw together some chopped cucumber with coconut milk and made a sort of yogurt-type sauce for dipping, which was pretty good, but the lamb didn't really need it. For some additional veg, I sauteed green beans from the CSA.

It took a little longer to cut up the shoulder chops than I expected, so dinner was later than I hoped. But well worth the wait.

Also glad I didn't cook all of the spiced meat, because it means there are leftovers for a REALLY quick protein at another meal soon! Always a good thing. But especially when eating paleo.
