I am doing an enormous amount of cooking lately due to our recent switch to a more "paleo" type diet.

This coincides with an extreme urge to post about food on the internets. Though I know that people are not all that interested in "this is what I ate for lunch" posts on twitter or facebook. So, I decided to come back to lj and babble about it here.

Monday I made some very yummy meatballs, but the real star was the sauce I made. I cut some tomatoes in half, chopped some onion and tossed them onto a baking tray with some red bell pepper and cloves of garlic. I slid the tray under the broiler for a few minutes and then in the oven for a bit longer until everything was roasted down and caramelized. I let it cool for a few minutes before putting it all in the blender for a quick blitz. This sauce was so wonderful just warmed on the stove and put over some fresh spinach and the meatballs. So good. Wanted to remember and share. :)
