Menu, Bean Cookie Dough, and the Ongoing Saga

Well, I'm still not stable. I was starting to do better, but then on Saturday, I couldn't sleep. I ended up going to sleep at like 5:45am and sleeping until about 8:45am or so. For someone who is usually in bed for about 12 hours and unconscious for 9-10 of those hours, this was clearly not enough sleep. I'm recovering, but I don't feel great, and I can't get myself to go outside (also, the weather here isn't terribly inspiring).

I had planned on having slightly more adventurous food this week, but the butternut squash-portion of that fell through, as there was no squash to be had. Instead, I decided to try the bean cookie dough that I have been hearing about for quite a while. I used adzuki beans, salted peanuts, cinnamon, and the juice from some applesauce (just enough to make it into paste). We don't have a food processor, so I mashed the cooked beans with a spoon, ground the peanuts in the coffee grinder, and mixed it all together. Surprisingly, it was a) not bad and b) not entirely unlike dough. However, it was a bit dry, and the peanuts were a bit strong. Obviously, it wasn't very sweet, but after an incident where I ate a bunch of dates and then was in so much pain from the blood sugar fluctuations that I thought I would die, I don't crave sweet anymore.

That was yesterday. Today, I mixed in a little bit of butter and some dark chocolate. It was more like cookie dough and pretty tasty. The taste of peanuts was much less noticeable. However, I had a lot of anxiety after eating it. Too much carbs? I tested my blood sugar when I felt anxious (6.1) and when I stopped feeling anxious (6.2), so it was kind of high, but not "you ate sugar" high (12.1 when I ate those dates). Also, it didn't go down, so maybe it wasn't sugar. Could it have been my digestive system being confused? I have no idea. I'll hold off eating them again for a while. However, it was fun to try something different. This week, I'll try to get some squash again and also try making some pork sausage patties.
