[makes 20 cookies and takes about 30 minutes]
1/2 cup butter
1/2 cup confectioners sugar
1 1/4 cup flour
1/2 cup cornstarch/cornflour
Preheat oven to 300.
Beat butter and sugar in a bowl with an electric mixer until pale and creamy.
Add the flour and cornstarch and beat until well mixed.
Roll out on floured surface and cut into squares.
Place on a cookie sheet and prick all over with fork.
Bake for 20-25 minutes until golden.
Comments: We realized we always have these ingredients on hand but had no idea we could make shortbread -- which we adore! It turned out easy enough, though we had a hard time making it rollable and ended up pressing it out on the cookie sheet and slicing it into squares right on there. They still came out utterly delicious!
