RECIPE: Entree: Pilotas

Taken from The Little Big Cook Book

[serves 4 and takes about 30 minutes]
1 lb ground pork
1/2 cup bread crumbs
2 eggs lightly beaten
2 tbsp finely chopped parsley
2 cloves garlic finely chopped/pressed
4 tbsp pine nuts [you can coarsley chop these]
salt & pepper to taste
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 cup oil for frying

Mix all ingredients together in a bowl. [except for oil]
Form into balls.
Heat the oil in a frying pan over medium-high heat and fry the meatballs until golden brown all over.
Drain excess oil.
Serve hot with rice.

Comments: Amazingly delicious! Pine nuts are the yum! We had this with bismati rice, but it would also be wonderful in place of falafel, on pita with tahini! I just added a little ranch dressing to my rice since we didnt have tahini at the time, and while not the same, it certainly proved to me that the pilotas would be excellent with such a sauce.
