This is a personal refrence, just so I can start figuring out some of the feast menus. I'm going to try digging through and finding the menus for the others I've been to as well.
Bergental Yule Feast : December 9th 2006
First:
Pancakes with Berries; white and wheat flour, salt, milk, butter, lingonberries. (told it was Bisquick)
Flavored Tea
Roasted Almonds (with salt)
(plus leftover eggs from dayboard)
Seconds:
Variation on Ruzzige Cake; Frozen bread dough, chard, kale, green oinions, goat cheese, parsley. (v. tasty, seemed better for being left to sit)
Red Head Salad; red cabbage, cider vinegar, olive oil. (I really hate cabbage, would spinach work?)
Thirds:
Roast Beef; eye of prime rib roast, spices. (Next trip, bring meat therm. for cooking)
Sauce for Meat; fennel flowers, egg yolk, rosemary, red wine. (interesting..)
Fava Bean Tarts; fava beans, milk, pork, strong and sweet spices, cheese. (scrub skins off/cook and soak thouroughly)
Pie crust Pastry; flour, salt, butter, sugar. (Bleh, pie crust, period, yes, but needs flavor/bite.)
Fourths:
Suffritto; chicken (thighs w/ bones I think), chicken stock, egg yolks, verjuice, spices, parsley. (Yummy.)
Fried Gourdes; zucchini, flour, canola oil, spices. (Wok + oil + random veggies = happy)
Fifth:
Baklava; filo dough, pistachios, honey. (explained that pistachios have less food allergies)
Coffee
Tea
In conclusion, must find recipe for Ruzzige Cake.
