Green walnuts soaking way longer then nine days

Aug 10, 2009 20:03

Ok, so I'm finally getting to the point where I'm ready to candy the green walnuts. Unfortunately, I'm uncer
tain whether the candied part is supposed to be the entire green walnut or just the would be "meat" of the walnut. I think it's the entire thing, since upon slicing open one, there appears to be no "meat", just skin where the meat would be.  Juana mentioned something about how the husks should fall off. So the question is if and when do the husks fall off.  See my questions below if anyone has attempted anything similar to this recipe help would be greatly appreciated.

For reference, the recipe has four easy parts.
1) soak wlanuts for nine days
2) Pierce them then allow to dry  - how dry do they need to be and will the husks come off at this time? I've currently allowed them to dry for two days.
3) plug the piercings with clove and cinnamon
4) boil in honey  (any idea how long it should be?)

I think tonight I will just dive into honeying one batch to see what happens. UNfortunately, even after soaking for way more then nine days, 80% of the green walnuts seems too hard, becuase I had difficulty peircing even with a very sharp knife.
