Saucing demo at Great Western War

I've been thinking about doing an artisans demonstration at GWW this year. My initial idea is to do sauces. I would have a pavilion and a shingle indicating what sauces or spice combinations are available and what they go with (meat, veggies, etc). I would have mortars and pestles that people could use to grind their own combination of ingredients, a small fire pit and vessels to make the sauces. The idea is that in a medieval village, a housewife would go to the town saucer and get the premixed sauces instead of making them herself.  Part of  the demo would be to create their own sauces, another part would be to do taste tests.

So here are some questions I need help answering:
1) What would make this demo really work?
2) How many recipes is just enough?
3) How would you run a taste test?
4) Is anyone interested in assisting with this or another food related demo at GWW?
