In an attempt at a Medieval French dish that can travel well to Alaska in August, I am making candied green walnuts. I have green walnuts (unripe) that have been soaking for 7 days (2 more to go) If anyone has attempted to candy green walnuts, I'd appreciate any do's or don'ts you have learned in the process. Also, any recommendations on presentation of them would be greatly appreciated. Juana already had a great idea for brains in skulls on dias de la morte. On a side note, after peeling about 3 dozen green walnuts without gloves, the stains on my hand have gone from deep chocolate to milk chocolate colored in 7 days. Vinegar did not wash away the stain at all, however shoving about 200 pounds of wet canvas from the Oregon camping trip out of a trailer and onto my back yard did the most to lighten the stains. So, I recommend hard labor to remove future stains. That, or gloves to prevent them.
