These came out of me wanting to try do several different things. My sister's birthday is coming up so I wanted to maker her something special. She had expressed curiosity over cookie butter recipes and very recently my Aunt sent me a bunch of new cookie cutters. So I went looking for something that called for cookie butter and I could roll out and I found these.
I used this
recipe, but I substituted peanut butter for cookie butter and I left out the nuts.
1c unsalted butter, softened
2/3c cookie butter
2/3c light brown sugar, packed
1 1/2 tsp vanilla
2 1/2c all-purpose flour
1/4 c cornstarch
chocolate for dipping
optional: sprinkles for fun : )
Combine the butter, cookie butter, and brown sugar in a large mixing bowl; beat until smooth and creamy. Beat in vanilla. Slowly beat or stir in the flour and cornstarch until mixture holds together.
**The original recipe doesn't chill the dough but I did. I found it much easier to roll the dough out after I had chilled it for a few hours.
Preheat oven to 350 degrees.
Roll out on a lightly floured board to about 1/4-inch thickness and cut with cookie cutters and place on an ungreased baking sheet.
Bake for 20 to 25 minutes, or until cookies are set and bottoms just begin to brown. Once the cookies were completely cooled I melted some chocolate and dipped away. To finish everything off after each cookie was dipped in chocolate I went crazy with some pretty sprinkles.
The recipe says it'll make about 4 dozen cookies, I used a slightly larger cookie cutter so I got around 3 dozen-ish.
