Death by Chocolate (and Peppermint) Chocolate Cookies

I took a bunch of pictures of the cookies being made, but unfortunately, I realized my method of getting the pictures easily off my phone is packed away after our move...er...two months ago. So, you'll have to make these wonderful creations yourself and see just how good they are in person.

Without further ado, I present Death by Chocolate (and Peppermint) Chocolate Cookies. Please see the cut for recipes and more details.



I have made this recipe twice now. Originally it was just Death by Chocolate Chocolate Cookies, but I had some spare peppermint candies and peppermint extract, and I thought that sounded really good. The first time I made this, it had the peppermint extract in the batter, and I simply put the candies on top of each cookie. Most people enjoyed them, but found them difficult to eat because of the central placement of the candy. So, the second time I made them (for a contest at work, in which I tied for second place), I crushed up the candy and put it in with the batter. I'll leave it up to you to decide what works best, but remember...when peppermint candy is crushed, it has a tendancy to turn to dust.

Ingredients:

2 1/4 cup all purpose flour
1/3 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter, softened
1/2 cup granulated sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
1 teaspoon peppermint extract
1, 3.9 ounce package of instant chocolate pudding mix
2 cups mix-ins (in this case milk chocolate chips and crushed peppermint candies - feel free to use whatever you like).

Method:

In a medium bowl, sift or whisk together flour, cocoa, baking soda, and salt. Set aside. Using a mixer, cream the butter and sugars. Add the eggs one at a time until well incoporated. Be sure to scrape the sides of the bowl as needed. Add the vanilla and peppermint extracts, then the chocolate pudding mix. Slowly add the other dry ingredients until combined. Stir in your choice of mix-ins. Bake at 350 degrees for about 10 - 12 minutes. Don't overbake.

If you melt the butter in the microwave and use real, unsalted butter, these cookies will come out soft and gooey. With or without the peppermint, they are well worth making!
