It's officially the 25th here in Aus, so Merry Christmas to all of you who celebrate it and happy holidays to all of you who don't. I'm all hyped up from a long day of baking for the occasion, so I thought I'd spam you all with some of my Ghosts of Bakey Past. There's only 3 days in this instalment as Day 8 didn't include any baking.
7 Meringue Swans
This dessert takes it's inspiration solely from the 12 Days of Christmas song.
It features a bevy of meringue swans swimming on a lake of lemonade jelly. The swans are filled with Chantilly cream, but the filling is completely interchangeable.
[recipe] 6 Bauble Cakes
This dessert was a tad adventurous. I've not covered spheres with fondant before, so it was definitely a task!
The cakes are dark chocolate and raspberry baked in mini hemisphere pans, joined and crumb-coated with buttercream before being covered in fondant. Each was decorated with a different pattern and often a different technique. It's definitely something I need to practise as they were by no means perfect, but not totally depressing for a first attempt.
[recipe] 5 Golden Wreath Cookies
For Day 5, I couldn't not do something wreath-ey. It's the one part of the song everyone enthusiastically chimes in to, even if they don't know any of the other lyrics.
These wreaths are Italian lemon biscuits, adorned with some gold holy leaves made from fondant, and coated chocolate sprinkles as berries.
