Hi, all! I've been a long time lurker for this community for as long as I can remember and I just have to say that I've tried several recipes from here and each have turned out amazing. Whenever I've had a need to bake or need some tips, I automatically know I can find what I'm looking for here. And if all goes well this week, I'll hopefully be ( Read more... )

It's not baking, but homemade dark chocolate truffles are tasty and relatively low in sugar. (Dark chocolate in general is lower in sugar and carbs, and therefore relatively diabetic-friendly.)

You could just cut out the icing sugar. The coconut makes it quite sweet anyway. You might also need to cut down on the Copha a bit if you're reducing the dry ingredients, otherwise your chocolate crackles may not set properly when you put them in the fridge. Hope this helps.

Do you mean chocolate crackles as in puffed rice coated in chocolate and allowed to set, or as in chewy cookies coated in icing sugar before baking?

The ones rolled in icing sugar. I've looked everywhere to see if I can find any that have a lower sugar content or sugar-free but I've come up empty.

So far as I know there's no diabetic friendly alternative to powdered sugar, so it's a definite no on chocolate crinkles in particular. My understanding is that there are plenty of recipes online for ordinary chocolate cookies that use artificial sweeteners though.
