Apricot chicken with veggie rice

Ingredients
1 onion, chopped
1 tbsp sunflower oil
1 level tbsp mild curry powder
2x350g bags cooked diced chicken breast, frozen
75g dried apricots, quartered
1 chicken stock cube dissolved in 300ml boiling water
200g frozen broccoli
800g golden vegetable rice steam bags (frozen)

Method
Fry the onion in the oil over a medium heat until soft. Stir in the curry powder and cook for 1 min. Add the frozen chicken and apricots and stir to coat well.
Pour over the hot stock and add the broccoli. Simmer for 10 minutes
Meanwhile, cook the rice according to the packet instructions, in the microwave or on the hob.
Remove the chicken from the heat, take out most of the apricots with a slotted spoon and put in a bowl. Add 100ml of the cooking liquid to the apricots. Whizz with a handheld blender.
Stir the apricot mixture into the chicken and heat through.
Serve with the rice.

I changed the recipe a little due to those pesky allergies and lack of kitchen equipment. Instead of using a curry powder, I used a combination of coriander, cumin and garlic. Instead of a bag of the veggie rice (then tend to have peppers in them) I simply cooked some rice and added a handful of frozen mixed veg. I also don't have a hand blender, so just finely chopped some of the apricots up.

HOWEVER OM NOM NOM NOM NOM. It was so good. The chicken took up all the flavours of the spices, onion and apricots and was really juicy. Mum really enjoyed it as well and this well definitely be made again .
