* I wrapped the last of the Christmas presents, or so I thought.  Another parcel came in the mail today and I'll wrap it tomorrow.  My mom shipped her gifts for the girls, here, so I've been wrapping her gifts as well.

LOL - I often want to click 'like' on LJ too!

Menu for the rest of the week:
Tues - Shepherd's pie and salad
Wed - Slow cooker salmon & corn chowder, garlic bread
Thurs - leftovers
Fri - beef taco salad, garlic bread
Sat - tuna casserole, broccoli
Sun - slow cooker honey lemon chicken, brown rice, carrots

I'm trying to use my slow cooker and doubling up meal prep to free up time on busy days.

This recipe is for just two people but I'll probably double the sauce and triple the meat to suit our family.

Lemon Honey chicken
2 boneless skinless chicken breasts
3/4 tsp ginger
1/4 cup lemon juice
1/2 cup honey
Put chicken in, mix ginger with lemon juice and honey, drizzle over top, cook low 6-8 hours or high 3-4 hrs.

I bought the dressing (Kraft), but I want to find a recipe to make my own to avoid the preservatives and sugar.
