I was taking a lovely spring drive yesterday and I found a place selling local honey! It's close enough to my house that the bees could have visited MY FLOWERS, which I find delightful. I tasted it and it is amazing ( Read more... )

Honey balls immediately came to mind. My family is Italian and makes them every year around the holidays.

Those look amazing, but I have a septic system and have to cart my trash 45 minutes to the dump, so frying stuff is not in my future. Maybe next year! :D

Go to allrecipes.com and type in "honey cake." Before I was vegan, I loved honey cakes. Honey-lemon cupcakes. Quick translation from the website I got them from:

2 lemons
6 tbs sugar
125 gram butter, room temp
100 gram white castor sugar
some vanilla
2 tbs honey
2 eieren, room temp
125 gram self-rising flour
3 tbs milk, warm
8 tbs powdered sugar

Peel the yellow skin of 1 lemon and cut thin, long strips. Squeeze the lemon and heat the juice with 2 tbs sugar in a pan. When the sugar is dissolved, add the lemon strips and let simmer for 5 minutes. Take out the lemon, put it on a plate, and spinkle with the other 4 tbs sugar. Let them rest while you make the cupcakes.

Heat the over to 200 °C. Grate the yellow zest of the other lemon and squeeze the lemon. Save the juice for the icing. Mix butter with castor sugar, vanilla and honey until light and fluffy. Mix in the eggs, the flour, the mild and the lemon zest.

Bake the cupcakes for 15-20 minutes.

Add 2 tbs of lemon juice to the powdered sugar and stir. Ice the cupcakes with this, and garnish with the lemon strips.
