yes, carnitas again

My work is having a potluck in a couple of weeks, and I decided to make carnitas for the party and serve it with tortillas, salsa and guacamole. Maybe beans and some kind of slaw if I'm feeling ambitious. Ever since making that decision, I have been craving carnitas somethin' terrible. I asked DH if carnitas was getting old, and he said no. So I made carnitas today in order to satisfy the carnitas craving.

I only used 3.5 lbs this time because last time we didn't finish the larger amount, and we are busy this weekend so won't be home much for meals. In any case, I fell asleep this afternoon and didn't wake up until almost 4pm so I had to rush to get the pot on the stove. I didn't even soak the meat before I took a nap. Hopefully it still tastes good, though it should because the recipe doesn't say to marinate. I used a little extra orange and lime juices because I felt like I had to use a lot of water to cover the meat.
