Summer Tilapia over Soba, ganked from
iverin Basically, it's pan-cooked tilapia (baked, or seared will work--we seared) with ginger, garlic, pepper, and sake (TINY bit). It's served on a bed of cooled soba with mixed vegetables (we had carrots, potatoes, green beans, lima beans, corn, and okra), then topped with miso dressing/miso-flavored sauce and lightly sprinkled with soy sauce to bring out the miso flavor.
Served warm but not hot, preferably with white wine or something lightly fruity (sparkling juice) as a companion beverage. It's inspired both by a Caribbean tilapia recipe I once was served, and traditional cold soba in Japan--the thought being that cool, flavorful food is best on a horribly hot day. I've seen a similar recipe with seared salmon over soba in a soy sauce.
Thinking on a sub for the miso dressing. I've only seen it this once, but I have seen miso sauces. The dressing (which I just picked up today and which has a ranch-y texture) is too dilute, and the soy sauce was needed. I think something with a fishier, earthier flavor would work... Perhaps cooking or marinating in something like dashi.
