Thanksgiving 2007

Dang, I did so much all week long that now just about everything's done, and I can relax and let the turkey cook.

I did get up early today to make the corn pudding, because I figured that it wouldn't really be good if I froze it, so I did that, and then wrestled the turkey out of the brine and got that in the oven by 9.

Paul's been taking pictures of the process, and I have to say...he's really brilliant with that camera.



Two of this year's recipes are directly from the annals of food_porn--one from last year and one from this year.

The corn pudding and the sweet potato cranberry bake...













I baked off the biscuits as well...







This is the turkey, fresh from its briny bath...







There's no getting around it--it's a cold, wet job....




Once the skin was loosened from the breast, I broke out the most amazing basting device ever invented....




Um, yeah....

That got all tucked up under the skin, draping the whole breast...

You can just barely see it under there....




After that, I stuffed the cavity with fresh herbs, onion, apple, and orange....










Once stuffed to capacity with as many fragrant goodies as it could hold, I tied the legs together...







Rubbed it all over with olive oil...







Then sprinkled it generously with salt and fresh pepper...







So now it's in the oven, and when there's only an hour left to cook, I'll hit it all over with the glaze I made last weekend, and it'll be ready to rock and roll.

The potatoes and the stuffing are done, the soup is warming in the pot, so the only thing really left to do is to make the gravy and stuff the cranberry jelly, and we're ready to go.

This is the most stressless Thanksgiving I think I've ever done!
