Red Pepper Dip

Ingredients:
  • 2 12.3-ounce packages low-fat silken tofu
  • 2 tablespoons lemon juice
  • 1 tablespoon cider vinegar
  • 1/3 cup canned roasted red peppers
  • 1 teaspoon chili powder
  • Several dashes Tabasco sauce
  • 1/2 teaspoon salt (optional)
Directions:
  1. Combine tofu, lemon juice, and vinegar in a food processor.
  2. Process until smooth.
  3. Add red peppers and chili powder.
  4. Process for several minutes until very smooth and creamy.
  5. Add Tabasco and salt, if using.
