Cajun Lentil Patties

Ingredients:
  • 2 cups of lentils, cooked according to instructions
  • 1 cup soft tofu
  • 1 medium onion, diced
  • 1 medium carrot, grated
  • 2 cloves garlic, diced
  • 1 teaspoon Cajun seasoning
  • half teaspoon Italian mixed herbs
  • salt
  • freshly ground black pepper
  • Olive oil for frying
Directions:
  1. Sauté the grated carrot, onion and garlic in olive oil for about five minutes.
  2. Add the lentils, tofu, Cajun seasoning and herbs.
  3. Cook for 10 minutes stirring regularly. The mixture will all clump together.
  4. Season with salt and freshly grated black pepper.
  5. Leave to cool.
  6. When cool enough to handle, shape into small patties.
  7. Fry in a small amount of olive oil for 5 minutes on each side or bake in a 350 degree oven for ten minutes per side.
