Ingredients:
- 2 cups of lentils, cooked according to instructions
- 1 cup soft tofu
- 1 medium onion, diced
- 1 medium carrot, grated
- 2 cloves garlic, diced
- 1 teaspoon Cajun seasoning
- half teaspoon Italian mixed herbs
- salt
- freshly ground black pepper
- Olive oil for frying
Directions:
- Sauté the grated carrot, onion and garlic in olive oil for about five minutes.
- Add the lentils, tofu, Cajun seasoning and herbs.
- Cook for 10 minutes stirring regularly. The mixture will all clump together.
- Season with salt and freshly grated black pepper.
- Leave to cool.
- When cool enough to handle, shape into small patties.
- Fry in a small amount of olive oil for 5 minutes on each side or bake in a 350 degree oven for ten minutes per side.
