Ingredients:
- 3/4 cup beans (black, cannellini, garbanzo etc.)
- 1/2 cup cooked quinoa
- 2 cloves garlic, crushed
- Breadcrumbs
- Basil (fresh or dried)
- Oregano (fresh or dried)
- Red pepper flakes
- Salt and Pepper
Directions:
- Preheat oven to 375 degrees.
- Spread breadcrumbs evenly on a plate.
- Drain beans well, mash in medium sized bowl.
- Add quinoa.
- Add garlic, herbs and seasoning as desired.
- Form into balls, then flatten slightly (should make 4)
- Lightly coat in breadcrumbs.
- Place on foiled or greased baking sheet, bake for 30-40 minutes. Flip half way through. You'll know they're done when both sides are golden brown and they appear firmer and crusty.
