Tuscan bean quinoa croquettes

Ingredients:
  • 3/4 cup beans (black, cannellini, garbanzo etc.)
  • 1/2 cup cooked quinoa
  • 2 cloves garlic, crushed
  • Breadcrumbs
  • Basil (fresh or dried)
  • Oregano (fresh or dried)
  • Red pepper flakes
  • Salt and Pepper
Directions:
  1. Preheat oven to 375 degrees.
  2. Spread breadcrumbs evenly on a plate.
  3. Drain beans well, mash in medium sized bowl.
  4. Add quinoa.
  5. Add garlic, herbs and seasoning as desired.
  6. Form into balls, then flatten slightly (should make 4)
  7. Lightly coat in breadcrumbs.
  8. Place on foiled or greased baking sheet, bake for 30-40 minutes. Flip half way through. You'll know they're done when both sides are golden brown and they appear firmer and crusty.
