I wanted to try this for a while and finally went looking for a recipe. I read three or five recipes and didn't quite like any of them, so the recipe behind the cut is my recipe, kit-bashed from the ones that I read. I LOVE how it turns out. I only just realized that I don't have this in my LJ, and wanted to, so I'm posting it.
Amy's Three Sisters Stew
10 oz 15-bean soup dried beans
1/4 to 1/2 c dried black beans
1 c chopped yellow onion
2-4 cloves garlic, minced
2 c cubed butternut squash
2 cans hominy
2 c frozen cut green beans
1 T chopped fresh sage leaves
1 T chopped fresh thyme
1-2 T salt (to taste)
Rinse beans and set them on to boil with 2 inches of water over them. Chop onion and add. Cube squash and add. Mince garlic and add. Add hominy (golden or white), then add frozen green beans. Add 2 cans of water. Chop and add sage and thyme. Let boil/simmer until it cooks down to thickness, stirring occasionally. Add salt when nearly cooked down. Taste and adjust as needed. Makes about 10 cups. Serving of about 1 cup is about 175 ca.
