This relatively simple chicken curry dish is turning into an epic journey into my twisted psyche. I swear to you, every step of the process has involved tin foil, plastic wrap, repeated washing of utensils and dishes... I've been out to the garbage cans twice. And I haven't even started cooking.
This is why I live two blocks away from a Thai restaurant. DO NOT WANT.
