I haven't been updating about food lately because I've been cooking so much and the amount I could write makes me not want to bother. Ironic, no?
I made gluten-free cupcakes from some recipe I found online.
gushi said it was like eating a
Power Bar, but he likes those. I thought they pretty much sucked.
I made gluten-free chocolate cupcakes with Coconut Pecan Fudge Frosting from
Vegan Cupcakes Take Over the World. They fell apart but were tasty and light.
I've been making steak fajitas and/or ground turkey chili like twice a week because
gushi wants to eat these things.
I do not want to eat these things, however, and have been making tofu scramble, tofu coconut curry, and oatmeal. The oatmeal has steel-cut oats and I put a bunch of other things in it, like ground flaxseed, honey, and sliced fruit. IT IS DELICIOUS.
I made coffee cake muffins with a crumble top for
gushi to eat on his commute since we're trying to save money by buying less food. I'm ashamed I got the recipe from
Emeril. The sour cream gives them a great texture and I used bananas instead of apples, because we didn't have any.
Unless I'm baking I rarely actually measure anything out anymore. I just sort of dash or pour some of the ingredient in and go "eh, it looks like enough." I'm not sure if this means I'm getting
better or worse.
