It is perfectly acceptable to use your hands when flipping crepes, especially when one is out of practice. If you can just get your spatula under the edge, which by the way, should look dry and cooked through, you can use your fingers to brace it and then flip the whole lot over.

Oh, well, not as difficult for me as it is just food being completely, completely stubborn. Honestly, it happens with omelettes too. [ now he's getting on a sort of ground level to look at the pan a little closer. ]
