It is perfectly acceptable to use your hands when flipping crepes, especially when one is out of practice. If you can just get your spatula under the edge, which by the way, should look dry and cooked through, you can use your fingers to brace it and then flip the whole lot over.

I do fancy myself one. In fact, I make the meals for the inn at the hot spring in the village. I go with eastern cuisine there usually, but I've operated a more western-style cafe as well.
