Michael Chiarellos Croutons (I didn't care for the panzanella he was making, but I will definitely make the croutons!)
For the croutons:
1/4 cup unsalted butter
2 teaspoons finely chopped garlic
2 teaspoons finely chopped fresh thyme
6 cups day-old bread, crust removed, cubed
6 tablespoons finely grated Parmesan, plus more for garnish
Salt and freshly ground black pepper
Preheat oven to 400 degrees F.
Melt the butter in a large skillet over moderate heat and cook until it foams. Add the garlic and thyme, and immediately add the bread cubes. Toss to coat well. Add most of the grated cheese and stir. Transfer bread to a baking sheet and sprinkle with the remaining cheese and salt and pepper and gently toss again while still warm to melt the cheese. Bake stirring once or twice, until the croutons are crisp and lightly colored on the outside but still soft within, about 10 to 15 minutes. Set aside and let cool.
And from last week's Nigella episode (this recipe was not up on the site when I tried to find it then)
Back-From-the-Bar Snack Recipe courtesy Nigella LawsonShow:
Nigella FeastsEpisode:
Solitary Sensations 2 rashers (slices) bacon, cut into little strips
1 teaspoon oil
1/2 cup frozen peas
2 cups cooked new or waxy potatoes
2 eggs
1/2 cup Cheddar, diced
Put some salted water on for the peas, and in a skillet that will take the potatoes and everything later, cook the bacon strips in the oil.
Cook the peas in the boiling water, and at the last minute, tip in the potatoes just so they heat up. Drain and turn into the pan with the bacon and take off the heat. Whisk the eggs with the cheese and then pour this over the potatoes and peas in the pan. Mix well and pour straight into a bowl to serve
In other news, the house on Pennsylvania is no longer on realtracs. Not sure what happened, if it's got an offer on it, if it has been taken off the market for a while since it wasn't selling, or if she's just switching realtors. I thought it would make me cry, bt it didn't. I love the house, but I sorta hope someone is buying it, because I just don't want to haggle prices and put that much work into that house - which is what would have to happen.
Bye-Bye 112 Pennsylvania, I loved ya.
