Company Rice with Beans

Cooked rice
2 cups water
1 Tbsp oil
2/3 cup coarsely chopped onion
2 cloves garlic, crushed or finely minced
28 oz can crushed tomatoes
1/2 tsp oregano
16 oz can pink (kidney, pink, black, or garbanzo) beans
Cheddar cheese

Cook rice separately at same time you’re cooking the rest in a skillet. In the skillet heat oil, add onion and garlic; saute until they’re soft. Add tomatoes, beans and oregano; cover and simmer, stirring occasionally until heated through. Season with salt, if desired, and pepper. Serve bean mixture over rice and top with cheese.
