Salmon and spinach risotto

SERVES ONE!! If you're cooking for more than one multiply all ingredients by the number of people except the stock, which you won't need as much as that. You can always add more hot water from the kettle if you think it needs more liquid. You can use brown rice but obviously it will take longer to cook ( Read more... )

can't remember the last time i cooked rice with a stock cube. haven't got most of the other ingredients for the risotto, but i'm pretty hungry right now so i'll inprovise.
and then go shopping in the morning, that way tonight can be a test run (not that i need practice at cooking rice).

i'm surprised no-one else has commented on this post yet, considering the amount of food enthusiasts you know (or maybe they don't know about this post as it's so old?)

I stuck this on here backdated, it would never have appeared on anyone's friends list. I think I commented on someone else's post with the recipe and then decided to store it on my own LJ for future reference. I've got a few posts like these, they're under "recipes" in my memories, I've got other people's recipes in there too, although they're not all veggie, and most require a proper cooker. The Red Dragon Pie is wonderful, but you do need a proper oven/hob for that.
