Have you tried Founder's software? It's available for evaluation here, and it seems to work pretty well, as long as you indicate what language you're trying to recognize (simplified, traditional, or English).
Make sure your image quality is top-knotch, though - it doesn't like JPEG artifacts at all.
Cheers - I ended up downloading Hanwang something-or-other, and it's mostly doing the trick - though to be honest, considering that I only needed about 6 pages of text, the amount of time I spent searching, downloading, configuring Windows to run Chinese applications, setting up the networked scanner, scanning, and OCR'ing/tweaking the documents could probably have been better spent, like, retyping them. The technology's pretty good, but once it gets about 5% better, it'll be about a million% more useful.
