I made eggy in a basket for breakfast. (Yes, it is 2 in the afternoon. Shut up.) Holy crap it is good.

Now I just need to go wreck me some Establishment.

It's so simple and easy, is the thing. Makes me wonder why I ever made eggs and toast any other way.

I modified slightly, sauteed some garlic first instead of buttering the bread. Very crispy.

It is just as easy as making toast and eggs separately, if not easier. I always seem to mistime them when I cook them separately and end up with one getting cold while the other is still cooking.

My mom used to make eggs in a basket for us when we were kids, so I've got lots of good memories associated with it. =D I make it probably once a week.

I had never heard of this meal referred to as "eggy in a basket" before yesterday. You're now the third person to independently refer to a bullseye as eggy in a basket in two days. Weird.

Bread soaks up oil, so this seems like it'd be pretty greasy to me. Maybe that's not a consideration for you, but it is one for me!

(Never thought it possible, but I'm stuffed on oatmeal and kefir. Youch.)
