So, the other night I had a lovely girls' night with my friends Bridget and Kat, and among many other tasty things, Bridget made some sweet potato enchiladas, which were amazing!  So even though I just ate them Wednesday night, I wanted to try them for myself immediately!  Bridget sent me the link to the original recipe (glutenfreegoddess.blogspot.
