What are your universal recipes? Recipes that are easy to play with, easy to adapt to fit whatever you have on hand. For breakfast and snacks, I've found a good basic muffin recipe to be an easy base to play with (though I'm still looking for a really good basic muffin recipe). Likewise, oatmeal. I would add potatoes to your list of bases. We love us some twice baked potatoes. I currently have a quiche in the oven with a shredded potato crust. Or potato gratin / scalloped potatoes. Baked French Fries (deep frying is a lot of work!)

Going along with your rice base, I'm a big fan of risotto with all of the vegetables I have in the fridge.

Our fallback lately when we're in a hurry has been egg salad. And now that the garden is producing, I've been having tomato and cucumber sandwiches or salads for lunch.

I like the idea of switching things up the next day with the same leftovers, I'll have to keep that fried egg trick in mind.
