Worcestershire (good that word is tough to spell) sauce is by far my favorite common sauce and it is probably the closest modern equivalent to garum. It's made from vinegar anchovies, tamarind, molasses and a host of other spices.
ETA: Found out that in indonesia they call worcestershire sauce "kecap inngris" (english ketchup)
