We're doing soups and salads for lunches for at least the next 2 weeks. They're cheaper since there's usually less meat involved, keep the kitchen cooler since the oven's not involved, and are usually a throw it in the pot and let it go until done kind of thing (well, the soups are, anyway). We try to up the number of salads we eat in the summer anyway, this is the first year we're consciously replacing our main dishes with soups. Also, trying for "lighter" soups. So as good as our Minestrone is? Not on the menu. lol
