You should try this. It's the best carrot cake I've ever had.

Unless of course that's the recipe you DID try in which case, how did you go so wrong? It's from a Junior Cook book! ;)

i did try it!!! That cook book has never failed me before. But. I think it was the temperature + using a pan that was too big (ie. cake was too thin and dried out/burned).

I have a great recipe for carrot cake that came with my blender, it has pineapple and walnuts in it. Will post next time I make it. mmm carrot cake!
