I tend to go a bit over board though, and try to include max range of vegies in it so it's healthy. I will try this for something more simply next time!
bit of both.. hewy did a creamy pumpkin risotto a few days ago (last week?).. so i based it loosely on that, just without the cream and so on.
also, the last couple of times ive gone out for italian ive ordered the pumpkin risotto.. and have decided that a pumpkin risotto HAS to be done so that the rice can suck up the pumpkin flavour.. as opposed to being rice done in a vege stock, with bits of pumpkin stirred through.. which is what i got at one place.. needless to say.. was not impressed by it!
I make a pumpkin risotto - but I cube the pumpkin & roast it & put it in at the end, with spinach. never thought of putting any spices in it though.. hmm...
i thought itd be nice putting it in near the start cause then the rice takes absorbs the pumpkin as it cooks. but the roast pumpkin and spinach combo sounds great!!
