Nadz0r's No Oil Apple, Banana, Pear and Carrot Muffins

I'm trying to mix up my work day snacks and this lady at work brought in GREAT oil free muffins. I tried another recipe and here it is for you - I based it on this recipe but made some pretty different tweaks to it.

Nadz0r's No Oil Apple, Banana and Pear Muffins

Aw, thanks for the pics! I was about to post "but what about the final product?" and then I read your bit about why... what a shame!!

You say they don't look that flash, but are they tasty? Are they moist? :)

yeah, they are yummy!!!! very moist, dense, great when slightly warm. all the fruit/veg means that it's moist cause it's got all that water in it. they just look like healthy muffins and will never be best in show.

AAA+ would definitely make again.

I make stacks of GF muffins, to freeze and eat for breakfast. When the 4 doz in the freezer run out, I will try these!

I made a modified version:

1 cup gluten free SR flour
1/2 cup wholemeal plain flour
1/4 cup buckwheat flour
1/2 cup LSA
3/4 cup oats
2 carrots
chopped walnuts
chopped dates
canned crushed pineapple (1/2 cup-ish)

For the liquid I used milk, plain yoghurt and some grapeseed oil.
I should have put the grated apple, banana or more pineapple in I think, they could definitely be sweeter/moister.
