I'm trying to mix up my work day snacks and this lady at work brought in GREAT oil free muffins. I tried another recipe and here it is for you - I based it on
this recipe but made some pretty different tweaks to it.

1 cup gluten free SR flour
1/2 cup wholemeal plain flour
1/4 cup buckwheat flour
1/2 cup LSA
3/4 cup oats
2 carrots
chopped walnuts
chopped dates
canned crushed pineapple (1/2 cup-ish)
For the liquid I used milk, plain yoghurt and some grapeseed oil.
I should have put the grated apple, banana or more pineapple in I think, they could definitely be sweeter/moister.
