Oh, petal, *hugs* to you. This time of year is just ridiculous. And wanting to feed yourself some proper slow-cooked food is a GOOD urge, so run with it. That's some well-spent time right there - as is LJ, dammit. You're entitled to a break as much as anyone.

I'm a bit scared to offer recipes as I know US casserole =/= British casserole. By topping do you mean like a gratin breadcrumby sort of thing? Or like a puffy suet crust a bit like a dumpling or a pie? Or did you mean, um, bread? I make a yummy thing which is basically random veg and tinned tomatoes and slices of french bread on the top: v quick as you mostly stick in the oven and ignore it...

Oooh, I hadn't thought of slicing up French bread! I'm not even sure if I want the gratin breadcrumby thingy or puffy suet thingy, shall have to keep pondering.

No matter what happens this weekend, however, I am making pumpkin streudel. I have been planning this baking event for a week now. It had better be the most delicious streudel ever made. And you're quite right about taking the time to make something nice and also edible. Comfort food! with vegetables! Not a bad thing.

I made something like that for Thanksgiving, actually! I browned a pound of ground turkey and a pound of diced potatoes, cooked about a cup of peas and carrots (corn could easily be included there!) stirred in two cups of gravy, and dumped it all into a 9x13 pan. Sprinkled a bit of sage and thyme over that, and shredded cheese over that, and the crust on top was 3/4 cup flour + 3/4 cup cornmeal + 1.5 cups milk+ 3 eggs.

I make this recipe all the time subsituting in different meats and vegetables and sauces, and usually with 1.5 cups flour and no cornmeal; it's pretty great. I originally got it from a friend who recommended pizza toppings and tomato sauce, though, and I have yet to come up with a more delicious version than that.

I have no good casserole recipes for you, but really if you aren't having to chop much casseroles are not very labor-intensive, right? It really wouldn't take much time.
