What kind of endorsements would a person need to fly a plane capable of hauling two people, two dogs big enough to need their own seats, some suitcases, and possibly a cat carrier?

Well, Sport Pilot doesn't cut it (just two seats), so it'd have to be Private. Beyond that, you could probably carry all that (depending on weight and range you wanted to go) in a Cessna 172, which requires no special endorsements. All the endorsements are pretty much for "fancier plane."
High Performance: (>200 HP engine) faster, heavier loads.
Complex: faster (more aerodynamic).
Multi Engine: (rating, technically) faster (?), heavier loads, lower complete-engine-failure rate
Taildragger: older style landing gear
Pressurized cabin: for high-level flight
Instrument: can fly through crappier weather
