After we got back from the CSA today, I did a bunch of food preparation, which is what I usually do on the weekend if we're home. I cooked us some chard and rice for dinner, cut up a cantaloupe and a pineapple that were sitting in the fridge, and made coleslaw.
I had bought the cabbage a few days ago, and I was seriously craving Thousand Island

Are you peeling the beets? I didn't wash mine so thoroughly, but I cut off both ends and then peeled them really well. How are you preparing them? Raw they tasted kind of sweet and sharp at the same time to me -- although once they were incorporated into the coleslaw, they were indistinguishable from the carrots. Cooked, they should taste very sweet.
