It's funny, I found the food in Italy to be fantastic. Pasta + meat + cheese to be sure, but with fresh ingredients, and some veggies or side salads.
However, I've mostly spent time in and around Florence, and a bit in Venice, never Rome or Milan. I can see how Tuscany & Umbria might continue to focus on the traditional food, whereas Milan may not have the same depth of culinary roots.
