Oooh, thanks for the recipe. I wonder how this would do if I used non-wheat noodles. It might turn them to mush. Well, only one way to find out...

It might. I used Yolk free noodles and they pretty much turned to mush...it was still good, but you couldn't really tell there were any noodles in it.

I've been thinking about this since I first saw it, and I just put some chicken in the fridge to make it tomorrow. WOo! Hubby won't eat chicken noodle soup... but he likes it when I put meat in with the "saucy noodle" packages. Seems likely this will be a hit, and it's healthier than the noodle packages.

Plus I could make it with rice too.

Quick question - egg noodles are a major favorite of everyone in my house (my kids love noodles so much, I think they should dress up as noodles next Halloween!) So half a bag will not go very far around here. Anyway, if I wanted to use the full 12oz package of egg noodles, would I need to double the amount of water in the recipe?

Also, if I wanted to do rice instead of noodles, how much rice could I add given the above amounts of chicken and water?

I don't think you would need to double the water, but I'd probably add an extra 2-3 cups.

I'm not really sure about how much rice to use, but I bet it would be delicious.

I don't know what size it was I just grabbed one off the top. It was a whole roasting chicken.
