That would also be tasty with apples and brown sugar and cinnamon...maybe some nutmeg and cloves. Mmm. Now I'm hungry. LOL.

New member here. :) Just to add that I saw a woman on Oprah once say that her mother's way of doing Oatmeal was to put it into the crock with apple juice, and it was amazing with no need for doctoring at all. I keep wanting to try it.

That's funny that you posted this today. I was just thinking that I want to try making a batch of oatmeal in the crockpot. Thanks for the recipe.

no prob! just remember that recipe is for steel cut (not rolled or fast cook) oatmeal.

it was really good, but it would have worked MUCH better in a smaller crock pot, mine is a better size for whole roasts etc.

I LOVE that book!! The overnight oatmeal was the first thing I tried. So good.

yes!! i LOVE me some overnight oats. especially when i sleep late and they get crunchy at the bottom ;) they're especially good if you add stuff to them, like chunks of apple, spices, etc. and since the hubs doesn't do oatmeal in my case, i make cookies with the leftovers.

also, i've made veggie burgers with overnight oat leftovers before, in cases where i didn't add any fruit or spices. just mix the leftover oats up with some egg and chop up whatever veggies you have in your fridge, then form into patties and bake or fry.
